Haggerty Family Beef Stew has been in our family for a long time. In fact, I am the one who created this delicious and hearty recipe. I think probably every family has such a recipe in the family, especially when you have to feed several people. This is a one-pot cooking experience so preparation and clean-up are easy.
The Main Ingredient, The Meat
It is especially enjoyed in my family during the winter months and it does not take all day to prepare. The main ingredient that gives the stew the best flavor is the meat. While other recipes call for “stew meat”, I have deviated from that particular item, because stew meat to me after cooking was bland, making the stew bland. I started using “Beef Short Ribs”. Short Ribs with the bone in have the most flavor, however, they can be purchased boneless.
Some other amazing ingredients
Moreover; (Still better than traditional stew meat) In purchasing the beef short ribs, try to select ones with as little fat as possible. Additionally, and if possible cut some of the fat off. Usually the boneless short ribs have very little fat. The remainder of the ingredients simply come out of the can, making this recipe easy and delicious. Oh yes, I forgot, with the exception of the potatoes. Fresh potatoes are a must.
Here are the ingredients you will need:
- 2lbs of Short Ribs (Remove as much as possible access fat or boneless)
- 1 Medium Onion
- 2 bay Leaves
- 1 can of whole kernel corn
- 1 can of green beans (One brand sells a small cut of bean which is ideal for this recipe)
- 1 small can of carrots
- 4 medium size potatoes cut into small sections
- 1/4 cup of Pace Picante Sauce
- 1 small can of roasted garlic tomato sauce
- 1 can of roasted garlic diced tomatoes
- 6 cubes of beef bullion
- 1 tablespoon of seasoning salt
- 1 tablespoon of Tony Chachere’s Creole Seasoning (Adds a little spice to the recipe)
- 1 tablespoon Black pepper to taste
This is a one pot meal, so here are the directions:
- Cook meat in a large pot with onions, bay leaves, beef bullions, and seasonings. Add enough water to cover the meat and then some. Cook meat until tender about two hours on medium setting. When done cut into bite size pieces and return to pot. Remove bay leaves.
- Add diced tomatoes and green beans. (Drain green beans) Cook about 20 minutes.
- Drain and add carrots, corn, potatoes and Picante Sauce. Cook until potatoes are done.
- Add tomato sauce and cook for an additional 10 minutes.
- Taste to be sure you do not need anymore seasoning to get to the taste that pleasing to the palette.
To accompany this delicious pot of Haggerty Family Beef Stew is a pan of Southern cornbread or your choice of crackers. When I cooked this stew my husband always preferred crackers and I preferred cornbread.
Now to a fine finish to this meal, a glass of Fine Wine will complete this meal.

Pairing a Red Wine with this meal would make it complete. Pino Noir or Syrah with beefy and hearty foods will be the best way to compliment this amazing wine. When you pair Pino Noir or Syrah, with steak or roasted vegetables and some cheeses, you will find the flavor smooth and refined.
